Chocolate Oatmeal Bars

These are similar to the ones that Starbucks sells for $3 a bar.

YUM!

Crust:

1 cup butter
2 ½ c. flour
2 c. packed brown sugar (I used Sucanat)
2 eggs
2 tsp vanilla
1 tsp baking soda
½ tsp cinnamon
3 c. quick cooking rolled oats

Filling:

1 ½ cups chocolate chips
1 – 14 oz can sweetened condensed milk
2 Tbsp butter
2 tsp vanilla
½ cup chopped walnuts or pecans

Preheat oven to 350 degrees. If you are using a glass pan, preheat oven to 325 degrees.

In mixing bowl, beat together 1 c. butter and brown sugar. Add in the eggs, baking soda, cinnamon and vanilla. Mix in the flour and then add the oats.
Press 2/3’s of mixture (about 3 1/3 cups) into an ungreased 9×13 pan.

Filling: Over low heat, melt chocolate chips with 2 Tbsp. butter and sweetened condensed milk. Remove from heat and stir in vanilla and nuts. Nuts are optional.
Spread chocolate filling over crust.

Sprinkle remaining crust mixture over the top of chocolate filling. I smooshed the crust into patties and then placed the patties over the chocolate filling. It just depends on how you want the finished cookies to look.

Bake for about 25 minutes until top is lightly browned. Chocolate filling will still appear moist, but the center should be set and not jiggly.
