Lemon Bars

 

When life hands you lemons, sometimes there are much better things to make than lemonade.

Crust:
1 c. butter, softened
½ c. pwd sugar
2 c. flour

Filling:
4 eggs
1 ½ c. sugar
Pinch salt
Pinch nutmeg
1 tsp bkng powder
¼ c. flour
½ c. lemon juice

Preheat oven to 350 degrees. I used a glass Pyrex dish, so dropped the temp to 325 degrees.

For the crust, mix together 1 c. softened butter, 1/2 c. pwd sugar and 2 c. flour.

 

 

 

Press mixture into bottom of an ungreased 9×13 pan.

 

Bake for 10 minutes. I have found that since I lower the temp to accommodate for the glass pan, that it’s better to bake the crust for 15 minutes.

 

While the crust is baking, beat four eggs in a mixing bowl.

Add in 1 1/2 c. sugar, pinch of salt, dash of nutmeg and dash of lemon peel.

 

 

Mix in 1 tsp baking powder.

Add in 1/4 c. flour

Beat in 1/2 c. lemon juice. I have found that lime juice makes pretty yummy bars as well.

I don’t know why the picture looks green – it’s really yellow.

 

Pour mixture over hot crust.

Bake another 15-20 minutes or until middle appears set. (Doesn’t jiggle when you shake the pan a bit)

 

 

 

Cut into bars.

 

 

 

 

Top with powdered sugar. I tend to put the sugar on a little thick because the cookies absorb some of the sugar.

Actually, you can put on the powdered sugar and then cut into bars – your choice.
